Inspired by the iconic Burgundian tradition that celebrates the end of the grape harvest, La Paulée by Constance Hotels & Resorts has become a signature event where exceptional wines, haute cuisine and enriching encounters take centre stage.

For one remarkable week, this deep devotion to wine is shared with guests through curated pairing dinners, educational tastings, and exclusive encounters with acclaimed winemakers. This year’s edition will welcome distinguished names such as, Domaine Olivier Rivière – Spain, Domaine Hamilton Russell – South Africa, Domaine Geantet Pansiot – Burgundy France, Weingut Bründlmayer – Austria, and Krug – Champagne France.

For the first time, the art of hand-carved Spanish ham is making its debut as part of the event, with the presence of Hernández & Jiménez. Known for elevating ”jamón ibérico” into a true gastronomic performance, the Spanish artisan will offer guests a unique tasting moment that blends tradition, and culinary artistry, adding a new layer of flavour and craftsmanship to the La Paulée journey.
Rooted in a culture of excellence, this exceptional gathering places strong emphasis on expertise, interaction, and sharing. This provides a unique opportunity for the hotel group’s sommeliers to benefit from in-depth training sessions alongside some of the most respected names in viticulture. In parallel, Constance Hotels’ talented chefs will orchestrate a series of exquisite gastronomic experiences, where the art of pairing elevates each tasting to a memorable culinary journey. The Gala Dinner will be orchestrated by Swedish Chef Sebastian Gibrand, Bocuse d’Argent 2019 winner. No stranger to Constance Hotels & Resorts, Chef Gibrand has also served as a jury member for the 17th and 18th editions of the Constance Festival Culinaire, and has delighted guests with an exceptional dinner during last edition, which is a testament to the culinary excellence that defines the hotel group.
The epicurean week will also shine a spotlight on emerging talent with the Best Sommelier of La Paulée competition, which will be held on Friday 16th of May at Constance Belle Mare Plage. More than a celebration of wine service, elegance and sensory precision, this competition embodies the values that the hotel group seeks to instil in its sommeliers and reflects a commitment to excellence, curiosity and continuous learning that lies at the very core of the Constance Hotels’ experience.
